Farm Overview:
Nestled in the renowned Mantiqueira de Minas region of Brazil, Toca da Onça (meaning Jaguar's Cave) is a family-run farm where exceptional coffee is produced with care, innovation, and deep respect for nature. Established over 40 years ago, the farm is now led by Luciana Flores Martins Swan, who continues her family's passion for producing outstanding specialty coffee.
Situated between 940 and 1,200 metres above sea level, the farm's rich soils, favourable climate and high altitude create ideal conditions for growing coffees with exceptional sweetness, balance and complexity. Toca da Onça cultivates a range of varieties including Yellow Bourbon, Yellow Topázio, Yellow Catuaí, Arara and Mundo Novo.
Sustainability is central to every aspect of the farm. Regenerative farming practices, biological pest control, biotechnological fertilisers, coffee husk composting and renewable energy all help protect the environment while improving soil health. Partnerships with local beekeepers encourage natural pollination, resulting in more even flowering, better cherry development and improved cup quality.
Every stage of production is carefully monitored, from planting through to harvest and post-harvest processing, ensuring complete traceability and consistently high quality. Coffees are harvested between May and August, then naturally dried on patios, with selected microlots undergoing controlled fermentation to develop distinctive flavour profiles.
Toca da Onça's commitment to excellence has earned national recognition, including 1st Place in the 2022 Coopervass Specialty Coffee Competition (Natural Category) and rankings among Brazil's finest specialty coffees. Every cup reflects the farm's dedication to quality, sustainability and craftsmanship from seed to cup.
